What’s concerning is that this setup makes it feel like customers are not paying for better wages or benefits for staff, but rather covering costs while the owner profits regardless. In other words, you’re not just paying for a meal here — you’re effectively subsidizing the business model while enriching the owner, with no clear benefit passed on to the employees.
I think diners deserve to know this before choosing to eat here.

But ceviche..
I understand that ceviche is meant to be “cooked” with salt and citrus, but in this case the lemon was overwhelmingly excessive. The acidity completely overpowered the fish and made the dish harsh on the stomach rather than enjoyable.
